Abstract:  Reliable, fast detection and quantification of melamine residues in food became a very important safety issue. In this work, we report a joint experimental and theoretical study performed on neutral and protonated forms of melamine, in order to determine valuable physico-chemical properties of the molecule. Surface-enhanced Raman scattering (SERS) spectroscopy was used in conjunction with quantum chemical calculations in order to characterize the structural and vibrational properties of this molecule. SERS spectra of melamine have been assigned based on Density Functional Theory (DFT) calculations at B3LYP/6-311G++(d,p) level of theory. The possibility of melamine SERS detection at 32.4 µg/ml level is shown.

Keywords: melamine, SERS, DFT, pH-dependence.
