Rezumat: The mixed lipid : carotenoid nanofilms spread at the air/water interface, namely (1) egg lecithin : β-cryptoxanthin; (2) egg lecithin : β-cryptoxanthin palmitate; (3) egg lecithin : zeaxanthin monopalmitate; (4) distearoyl lecithin : zeaxanthin; (5) distearoyl lecithin : astaxanthin; (6) distearoyl digalactosyl glycerol : astaxanthin have been investigated. The curves of surface collapse pressure versus nanofilm composition are discussed in terms of surface mixture thermodynamics. It has been found that the system (1) presents a perfect behaviour throughout the entire range of composition, while systems (2) and (3) can be satisfactorily described by the regular solution theory. For systems (4) - (6) a new approximation is proposed, considering the formation of supramolecular associations in nanofilms. The stability constants of the supramolecular complexes in nanofilms are calculated and correlated to the specific interactions that can occur in mixed nanofilms in substantial agreement with the molecular structures of the investigated biocompounds. | |||||||
